Here are some things I would have a look at:
1. WordPress -> Settings -> General ->
Site Title & Administrative Email Address
2. s2Member -> General Options -> Email Configuration
3. Other plugins. Try disabling other plugins until you eliminate what could be a conflict between s2Member and something else you have installed. Another plugin might be "getting in the way", inadvertently of course.
4. Does your server send emails instantly, or are they being queued for later delivery? If so, you *might* actually be receiving emails from previous test transactions that you ran; as they may have been delayed in a queue somewhere.
5. Are you receiving emails from PayPal directly? if so, you might want to check your PayPal Profile options, inside your PayPal Account. See: PayPal.com -> My Profile.
