Set their role to the member of S2Member level you want them to have, then below that in the "s2Member Configuration & Profile Fields" section set the "Automatic EOT Time" to the date you want the membership to expire (if you click the ? there it tells you what formats it accepts.)

If you have the setting at s2Member PayPal® Options --> PayPal® EOT Behavior --> Membership EOT Behavior ( demote or delete )? set to "demote (convert them to a free subscriber)" after the end date you specified for their subscription, when they login it will redirect them to your "membership signup page" and they can make a purchase.

I'd suggest creating a test user with an expiry time of one day and make sure it all works how you want before creating the login for someone who you want to become a paying subscriber.
