In WP Admin -> s2Member -> General Options -> Custom Registration Fields you'll see in a table the ones you have created, and at the end of each row, there's an icon with a red x to delete it.

Choose well because it doesn't give any "are you sure?" warnings.

Trying to delete a custom field on register page but
there doesn't seem to be the option in custom reg fields
- seems to have disappeared off the list
