Wow! I have to edit a php page? I'm not a coder... so that is not cool.

Suggestion: Included an "Add Membership Level" button.

Please see the inline documentation under WP Admin -> s2Member -> General Options -> Membership Levels/Labels -> Unlimited Membership Levels.

How do I add a new membership level to s2pro? There doesn't seem to be an obvious way.
