I don't know how the dev team is unit testing the individual units of the plugin (eg: each method) - possibly via phpunit ?

As far as integrating s2Member into a WP site, I've been:
~ testing the various parts/pages/forms appearance and display locally (eg: this page should display the signup form, this page should display the thank you message, this page should appear only to paying members, etc)
~ move to a server on the web to test the cycle with a PayPal Sandbox account (you need to be on the web for Paypal sandbox to accept your transaction, I believe)
~ at some point we'll go live switching from the PayPal sandbox to the actual merchant account
