I want to create different signup forms (using pro forms) and based on which form the user fills out will redirect them to a specific page (after paypal payment on site). Is that possible? I was thinking that adding a hidden field in the form, then based on that value, would redirect the user to the proper page.

Sure. Try the success attribute for the shortcode. WP Admin -> s2Member -> PayPal Pro-Forms -> Custom Return URLs On Success
