setup membership by cheque

Is there a way of setting up the membership so that we dont use a payment gateway?
What we want to do is have users fill out their details and credit card details or post a cheque and email us.
After payment has been made we open the account for them.

Well, you could always set up a contact form for users to get in touch with you by email, many plugins for this will allow you to create custom fields too.

I don't recommend you collecting credit card details, though, but cheques or deposits should be fine.

Once payment is confirmed, you can create the account manually from WP Admin -> s2Member -> Add A Member.
