I am setting up to drip content on my blog using S2member (great plugin btw).

Problem is, I don't know how to TEST to see if my code is setup correctly. Normally, as admin I can see everything on a page that the highest level user would see.

On my drip content page, this is still true and the content that is to be dripped is currently hidden. However, how do I test to see if it will be made visible at the appropriate time and to the appropriate users?

You'd have to create test accounts with the levels you want to test. And to avoid waiting all the days you normally would wait, change your conditionals to 1 day to see if your code works, then change them back to what they should be.
