Hi there,
I have created a subscription that is once off and I used the PayPal Button generator to create the button. However when a user subscribes a PayPal profile is immediately setup and then immediately canceled. This should not happen for a once off payment.

What am I doing wrong?

Could you share a screenshot of that? Also, please show us your button shortcode and the IPN log entry for that transaction.
