Oh, so you do get the confirmation email? If you confirm, do you then show up in the list?

Well, to add to the joy over this role email issue. My sales@ address has appeared in my mailchimp list as a result of me signing up to my own site (after having logged out). So perhaps the role email address restriction is only for bulk email entries.
I am at a loss as to why only some email addresses are appearing in my mailchimp account.
Perhaps it is just because people arn't clicking the double optin prompt they are sent.
But if you guys are speaking with mailchimp on a technical level, then I'm sure you'll offer clarification at some point.

Awesome, thanks for the update! I'm glad you showed up in the list. The reference I linked to above does mention that it's for bulk imports, but I thought maybe it was the same for the integration; I'm glad it isn't.
