If i just want to protect a sentence or a paragraph, are there short codes i can use?
if no shortcodes is there a video tutorial that you can recommend?

Sure, you can use conditionals.
WP Admin -> s2Member -> API / Scripting -> Using Simple Conditionalshttp://www.s2member.com/api-scripting-overview-video/

I looked at the video but it doesn't really go into how to implement the shortcodes into a post to protect part of the post.

Read the documentation for them too, it gives several examples.

Cristian, quick question for you. Does it matter if I restrict a post/page from here...
"s2Member® Restriction Options" or on the post by clicking on the post/page itself, "Post Level Restriction?
Add Level Restriction? * see: General Options -> Post Level Access"

They're the same. If you edit one, it'll change in the other one too.
