In the free version of s2 member, Is there a way to customize the registration form fields so that only the first name is required to register?

You have a setting to remove both, first and last names, but not a setting for just one of them. Still, the username field would be left, of course. Wp Admin -> s2Member -> General Options -> Custom Registration -> Collect First/Last Names

does the "pro" version have the option to capture just the first name?

No, I have PRO and it doesn't only take one or the other. Actually I think only the PRO version has the option Cristián mentioned.
